The sauceless pulled pork is fun to experiment with. We adore Southwest Eggrolls from restaurants and these are a twist on those. With fire roasted corn, black beans and the pulled pork, these can’t be beat– especially for a crowd! These are almost like mini quesadillas.
Instead of a whole tortilla, you cut a fajita sized one in half. This creates fun little triangles ready for dipping. Even though we love corn tortillas, flour work best for this recipe.
After scooping the filling into the tortilla half, top with cheese then fold in half. Instead of butter, brushing the outside with an egg wash creates a super crispy crust. The tortilla will puff up almost like an egg roll wrapper.
This dipping is our new go-to for nuggets, to drizzle on fish tacos and more. It is SO addicting. Great for a taco salad, too! If you can’t find the chipotle ranch packet, just substitute a regular one.
