The girls have been asking me questions all week, which I know for a fact are part of some grand Mother’s Day scheme. It’s kind of adorable and I cannot wait to see what they’re up to on Sunday. Since they’ve become quite little chefs lately, I thought I would help you AND the girls out by sharing some of my favorite (and simple!) brunch ideas.
Ultimate Overnight Breakfast Casserole
Always a hit at a brunch, this uses English muffins instead of bread for a delicious twist on an overnight casserole. This can be whipped up the night before brunch, then baked for about 45 minutes the next morning.
Yes, you read that right–sangria + margarita combined. Mama will be SO happy to enjoy this instead of a mimosa. Promise. To make this a mocktail (like I’ll be enjoying this Mother’s Day!), simply use a non-alcoholic sparkling juice or champagne and extra lemon lime pop.
Apple Cinnamon Yogurt Pancakes
Once you try these made-from-scratch pancakes, you’ll never go back to the boxed mix! Not a fan of apples? Sub bananas and chocolate chips OR blueberries.
Everything Bagel Spiced Smashed Potatoes
These are a perfect side for any brunch spread. To save time, boil the potatoes a day or two before and smash them the day of baking. The Everything Bagel spice is found at Trader Joe’s and is delicious on top of cream cheese for bagels too!
These stuffed peppers are a perfect combo of healthy with an indulgent twist with the bacon. A variety of colored peppers make this dish pop on a brunch spread. Serve with the Everything Bagel spiced potatoes!
This recipe makes TWO quiches…or is plural quiche? No idea! Ha! If you have a smaller group, freeze the second one. Also, take some help from the store with the crust. We love the Aldi refrigerated crust best.
This is a treat that can be enjoyed all week long with yogurt! Skillet granola is a game changer and it whips together so quickly. No more burnt granola from the oven!
