When I first heard all of the buzz about Egg Bites, I had to figure out how to make them cheaply at home. Now, they’re one of my Sunday prep day go-tos! This version has ham, peppers and spinach. Save money and make these at home!
Our household goes through almost 3 dozen eggs a week. I often wonder where my kids put all of the food they eat! I’m all for finding new egg recipes, since they’re so cheap.
While this recipe is made in the Instant Pot, you can also use any pressure cooker you have or even the oven. The key is this fun egg cup, available on Amazon.
The best part of these cups is you can add whatever you have on hand. One week, we enjoyed broccoli cheddar ones, the next I was cleaning out the fridge and we used all veggie. Once cooked, you can easily reheat in the microwave in about 20 seconds.
It may seem strange to use cottage cheese in these, but once blended they end up making the eggs super fluffy and light. Plus, you can’t beat adding extra protein when you can!
Quick tip: don’t fill the cups all the way up to the top, leave a little room for them to expand! Also, the plastic cover that comes with the egg cup holder is fab for storing, but don’t use it in the IP or oven! That is a mess you don’t want to clean up!

I finish the egg cups off with some Nature’s Seasoning (or salt and pepper). These can be stored in the fridge for up to 5 days, but honestly they won’t last that long! If you find the eggs aren’t cooked completely after 11 minutes, try 12 or 13.
