This post is a collaboration as a Curly’s BBQ Ambassador for 2017. Throughout this year, I’ll be sharing delicious recipes featuring Curly’s BBQ!

 Our favorite BBQ, Curly’s, is turning 30 on August 15! To celebrate, I’ve created a perfect meal for breakfast, lunch or late night…you know how those birthday celebrations can get!

 If you’ve been following along on social media, you may have noticed something: we have a new family member! Since sleep is VERY limited right now, our meals have to be quick and easy. Brinner is for sure my go-to since everyone enjoys it.

To switch up our normal pancake, waffle, french toast rotation, I’ve added hash! It’s a great way to use up veggies and you can be so creative with it. One pan, a little chopping and the meal is ready in under 20 minutes. We love to use the Curly’s RoadTrip Eats IPA Pulled Pork variety, found in the refrigerated section at your grocery store. The flavor is sweet and smoky, which pairs well with the potatoes and onions.

 If you have some extra time during a weekend prep day, you could easily chop the veggies ahead of time. I love the combination of sweet and red potato, onion and peppers. If you have a bounty of peppers from your garden, this would be a perfect way to use them up!

Aside from chopping, this meal is so quick and easy. I like to season up the veggies a bit to pair with the BBQ sauce on the pork, but that’s all you need to do! The Curly’s BBQ is pre-cooked, which is such a lifesaver. We keep at least 2 packages in our freezer for quick and delish weeknight meals.

Curly's 30th Birthday BBQ Pulled Pork Hash
Servings: 4 servings
Ingredients
  • 1 16 oz package Curly's West Coast IPA Style Pulled Pork
  • 1/2 cup red onion chopped
  • 1 cup Sweet Potato cubed
  • 1 cup Red Potato peeled and cubed
  • 1/2 cup green pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 jalapeno seeded and chopped
Instructions
  1. Heat a skillet over medium heat. Add 1 tablespoon canola oil.

  2. Add chopped veggies, then season with paprika and cumin.

  3. Cook veggies until softened, about 10 minutes.

  4. Add pulled pork and stir to combine.

  5. Top with 4 eggs. Reduce heat to LOW and cover loosely with foil. Eggs will cook in about 8 minutes. Optional: Cook eggs on the side, instead of top of hash.

  6. Serve immediately with toast. Top with cilantro, if desired.


Recipe Notes

To feed a crowd, simply double the recipe and cook eggs on the side. This is great for a brunch!

Eating this late night? It goes SO well with a nice hearty beer, IPA especially.
