How to Enjoy ME time in the Summer with Kids

Since I’ve been pregnant this summer, travel hasn’t been an option for me. That doesn’t mean that we haven’t been enjoying some fun in the sun! Last year, we made the best purchase: a 12 foot steel-framed pool. The girls can swim safely (it’s only 3 feet deep) and I can float away my back pain. Score!

When it’s time for some ME time, I love to whip up a Watermelon Refresher and read my PEOPLE magazine on the patio. From “Star Tracks” to the fun seasonal recipes, I love everything about PEOPLE! It’s been one of my go-to magazines for decades. While I was doing my weekly shopping at Jewel-Osco, I decided to pick up the July 14th issue of PEOPLE while I was at checkout. I love to have new reads for in the car or by the pool.

What is a Watermelon Refresher? It’s my new go-to…and it will only get better when I can add some rum or tequila to it! Coconut water is my go-to to re-hydrate and watermelon is so cheap this time of year. If you’re growing mint, this is a great way to use it up!

Watermelon Mint Refresher

Quick and easy way to hydrate when it's steaming hot out! Coconut water is combined with fresh watermelon, mint and lemonade. Perfect for pool days!

Servings: 2
Ingredients
  • 2 cups ice
  • 1/2 cup prepared lemonade
  • 1/2 cup coconut water
  • 1 cup fresh watermelon
  • 5 leaves fresh mint
  • 1 teaspoon agave nectar (OPTIONAL)
Instructions
  1. In a blender, combine all ingredients. If neccessary, add agave nectar for extra sweetness. Pulse until becomes a slush. Pour into glass and enjoy!

Yum, right? It’s fantastic with frozen strawberries, too! For a happy hour drink, add 2 ounces of your favorite alcohol–rum, tequila or vodka are perfect! An adult slushie? YES PLEASE!

For rare moments of ME time, I like to pamper myself. Since I’m pretty limited with my huge baby bump, here are some fun suggestions:

  • Play your favorite songs and kick your feet up in front of a fan
  • Pick up a copy of PEOPLE magazine and get a manicure or pedicure. Treat yourself!
  • Go through your closet and donate items to the thrift store. After, reward yourself by shopping the end-of-summer sales and grab a new date night outfit!
  • Quart of ice cream. Enough said. NO SHAME.
  • Make a Watermelon Refresher and binge your favorite trash TV. Hello Real Housewives of wherever!

Since we’re super close to Lake Michigan, I like to keep our beach essentials handy in a cooler tote. Aside from snacks and drinks, I always have a few magazines handy. Extra flip-flops are always nice, since they’re always super gross and sandy by the end of the day. Sunscreen for both the girls and myself is another beach bag must. Did you know when you’re pregnant, you’re more likely to burn? I’ve upped my SPF to 50 this summer!

One of our essential on-the-go snacks is my Sriracha Chex Mix. We always have a batch made for snacking and it travels so well! Everyone in the family gets their own snack bag, drink and towel for the beach. What are your beach bag essentials?
