
Heat a skillet over medium heat. Add 1 tablespoon canola oil.
Add chopped veggies, then season with paprika and cumin.
Cook veggies until softened, about 10 minutes.
Add pulled pork and stir to combine.
Top with 4 eggs. Reduce heat to LOW and cover loosely with foil. Eggs will cook in about 8 minutes. Optional: Cook eggs on the side, instead of top of hash.
To feed a crowd, simply double the recipe and cook eggs on the side. This is great for a brunch!
