I love when the weather gets cooler because that means one thing: comfort food time! Although there’s nothing better than a creamy casserole, I am trying to lighten up my recipes a bit. Now that Liam is almost 3 months old, I’ve joined Weight Watchers to help get rid of some of the extra pounds I’ve put on.

They come in a variety of cuts: broad, extra broad, Kluski, Dumplings, fine and now stir-fry! I love that No Yolks are cholesterol free, plus low in sodium and fat. It’s fun to come up with new uses for them besides casseroles or stroganoff –try the noodles with chicken parmesan or lo mein.

My kids love these noodles, especially when they were little. It’s nice because they are bite sized and perfect for little fingers to pick up. Try them with a cheese sauce instead of elbow noodles or with a simple butter and Parmesan cheese sprinkle. So delicious as a side for grilled chicken, tossed in pesto with roasted tomatoes. Th ere are so many possibilities!
