Super simple + tasty layered cake with Blue Bunny® Homemade vanilla ice cream, vanilla wafers and Smucker’s caramel and fudge. Frozen in a bread pan for easy slicing! YUM!

Who is ready for summer?! We are SO close to being done with school–Gabby is done with preschool tomorrow and the twins finish up on the 10th. Ice cream and summer go hand-in-hand, don’t they? We’re fans of a big bowl of ice cream after dinner. The Blue Bunny varieties are our favorite from Walmart because they are FULL of toppings. I have to hide the Blue Bunny Super Chunky Cookie Dough in our garage freezer for myself–cookie dough is my weakness! The new clear packaging showcases the swirls of flavor inside–you can SEE all of the goodness inside.

Instead of using a large 9×13 pan, I thought a bread pan would be fun–you slice the ice cream cake like bread! This really displays the layers of toppings and it’s the perfect serving size!

I almost called this an ice cream lasagna, since the toppings are layered in the bread pan. First you sprinkle crushed vanilla wafers, then you top with the Blue Bunny ® Homemade Vanilla ice cream, top with Magic Shell Fudge and caramel. Are you drooling yet?! The best part is the whipped topping at the top drizzled with fudge and caramel. After it freezes together, the Magic Shell creates big, crunchy bites of chocolate in the slices of cake.

You can go crazy with different flavors of ice cream and Smucker’s toppings–pick the Blue Bunny Banana Split flavor and layer with bananas, fudge and the Smucker’s Strawberry Spoonable topping. The Smucker’s toppings are an expensive way to add some fun to your summer ice cream–I stock up on all of them!

Caramel & Fudge Crunch Ice Cream Cake
Ingredients
  • Blue Bunny® Homemade Vanilla Ice Cream
  • Smucker's Magic Shell Chocolate Fudge Flavored Topping
  • Smucker's Microwaveable Hot Fudge Topping , warmed up
  • Smucker's Sundae Syrup Caramel Flavored Syrup
  • Frozen Whipped Topping
  • 2 Cups Vanilla Wafers , crushed in medium pieces
Instructions
  1. Spray a bread pan with cooking spray. Line longer side with parchment paper.
  2. Allow ice cream to sit out 5-10 minutes to soften.
  3. In the bread pan, sprinkle bottom of parchment with crushed vanilla wafers. Drizzle with caramel and magic shell.
  4. With a spatula, press a 1-inch thick layer of ice cream. Repeat once.
  5. On the top layer, spread whipped topping. Drizzle more caramel on top, plus hot fudge and any remaining wafers.
  6. Freeze for 3-4 hours.
  7. To slice, pull up on parchment sides. Place on plate or cake stand. Slice into 1/2 inch to 1 inch pieces.
  8. Optional: drizzle more Smuckers toppings.

    I have never made a homemade ice cream cake. You make it look doable. I love any type of chocolaty topping on my ice cream. Blue Bunny has the most amazing flavors.
