Healthy Salad: Mexican Mixed Bean Salad

This recipe is part of my collaboration with Randall Beans.

Switch up your fiesta sides with this Mixed Bean salad. It’s delicious on it’s own or with chips!

Also great with chips! via @DashOfEvansOlivia’s nickname is “Beans” because they’re her absolute favorite food. That girl can throw down some refried beans like I’ve never seen a kid do before. I’m happy because she loves the protein and fiber filled food, but isn’t it a bit strange for an 8 year old?!

Bean salad is perfect for the summer because you can easily run to your pantry, grab the ingredients and pair with fresh produce. I love the Mexican flavors in this salad, plus the variety of beans. Plus, it looks so gorgeous! If corn is in season, use fresh, right off the cob.

Also great with chips! via @DashOfEvansIf I’m planning this for dinner, I mix up the beans and veggies, but leave the dressing on the side to toss about 20 minutes before serving. To bulk it up a bit more, you can add cooked and chilled quinoa, too! The girls love to use this as almost a bean salsa and dip hearty corn tortilla chips in it. Whatever floats your boat!
