At almost any of our family parties, you’ll find bacon wrapped lil smokies. They are the best, but wrapping those little sausages can be so tedious. I decided to make it so much easier by using full sized smoked sausages.
During the summer, Eckrich Jalapeño & Cheddar Smoked Sausages are a go-to for grilling. Their sausages are hardwood smoked and have just the right blend of spices for that savory taste you crave. Plus, they are already cooked so I spend less time in the kitchen and more time with my family. You can find them right in the deli section at your grocery store.
I knew the Jalapeño & Cheddar variety would be perfect to wrap in bacon. If you’re not a fan of spice, substitute the Eckrich Cheddar Smoked Sausage Links. These aren’t knock your socks off spicy, though. My three girls gobbled them up, no problems.
To finish off the appetizer, I wanted something a bit sweet for the glaze. By mixing brown sugar and pepper jelly, you get this sweet, syrupy glaze with a little bit of a kick. Paired with the slight spice of the sausage and melted cheese, these DO NOT LAST LONG for any party.
I highly suggest making 2-3 batches of these bites…be prepared to share the recipe, too!
You can make these up to five days ahead of time, just bake them before you’re ready to serve. Simply wrap the Eckrich Jalapeño & Cheddar Smoked Sausages in bacon, spoon on the glaze and then cover with plastic wrap to store in the fridge. I love that from start to finish, these bites take less than 30 minutes.

- 1 14 OZ package Eckrich Jalapeño & Cheddar Smoked Sausages cut in 1/4ths
- 1 16 OZ package bacon
- 1/4 cup brown sugar
- 1/8 cup pepper jelly

Preheat the oven to 400º. Coat a 9x9 baking dish with cooking spray.*

Cut the bacon slices in half. Wrap each bacon slice around 1/4 slice of smoked sausage. Place seam side down in the baking dish. Repeat until all sausages are wrapped.

In a small bowl, mix brown sugar and pepper jelly. It will be a thick sauce.

Spoon glaze over wrapped sausages, using just a small bit on each sausage. The mixture will melt in the oven and form a glaze.

Any remaining glaze mixture can be put in the bottom of the pan, between the sausages.

Bake for 22-25 minutes, until bacon is cooked and glaze is shiny. Serve with toothpicks.
*If you plan to double or triple the batch, use a 9x13 baking pan.
This is a fun appetizer for the kids to help with–just cut the bacon and sausages ahead of time. My girls liked to count the rows to make them even and mixing up the glaze was Gabby’s job. We love family time in the kitchen, especially when music is cranked up on the speaker.
As my kids grow older, they love the memories created in the kitchen. Olivia now likes to write down her favorite recipes in a notebook and Maddie is all about finding the perfect dish or table setting for our snacks.
