Who said you can’t have pizza for breakfast? Try these simple and delicious Bays English Muffin breakfast pizzas for any meal!

I have been really making an effort to make (and follow!) a meal plan each week. My number one request from the kids is Brinner. The best part about breakfast for dinner is you can have so many meal options: pancakes, waffles, omelettes and our new favorite breakfast pizzas!
Growing up, my mom always had Bays English Muffins in the refrigerator. We’d top them with butter or jam on a Saturday morning while reading around the table. The package alone has such a nostalgic factor. I remember being home sick from school and my mom would make a Bay’s muffin to help me feel better.
When you’re grabbing eggs or butter at the grocery store, pick up the Bay’s English muffins right in the same aisle! There are four varieties to choose from: honey wheat, Sourdough, Multi-Grain and Original. We love to have them on hand for a quick breakfast on the go or a snack!
These breakfast pizzas are so fun to make as a family, plus you can make a topping station for everyone to make their own. We love salsa for the sauce, but you can use traditional tomato sauce, too. Our favorite toppers: ham, breakfast sausage crumbles, bacon, peppers, green onion, avocado and lots of cheese! Some mornings, I love this with just veggies for a nice savory breakfast. You can toast up one or six pizzas in the same amount of time.
To save time during the week, I like to make a large batch of scrambled eggs for these pizzas on my Sunday Prep Day. These breakfast pizzas can come together in under 10 minutes with prepped ingredients!

Who says pizza can't be for breakfast?! Try these simple Bays English Muffin breakfast pizzas for any meal!
- 1 package Bays English Muffins
- 6 eggs whisked
- 1 cup salsa of choice
- 2 cups Colby-Jack shredded cheese
- Toppings of choice Ham, crumbled sausage, bacon, veggies, etc

Preheat oven or toaster oven to 375.

In a pan, heat eggs until scrambled, over medium low heat. Don't over cook!

Line a cookie sheet with foil. Coat with cooking spray. Line open English Muffins cut side up. (Make one whole muffin per person).

Top each English Muffin with salsa, then scrambled eggs. Sprinkle with cheese, then meat and veggies of choice.

Cook for 5-8 minutes, until crispy and brown.
