Time for another delish recipe I created for Randall Beans! This is an old favorite I thought should be shared again. Originally published in November of 2016, I’ve updated with some new suggestions and notes!

If you’re not quite sure about quinoa, this soup is a great starter. It adds extra protein and texture to the soup and you’ll fall in love with it! What we love so much is that this Taco Soup can be altered in so many different ways: use beef instead of turkey, black beans instead of kidney and ANY topping you love. 

To cook it in an Instant Pot or pressure cooker, just use the sauté function, then cook on the SOUP setting for about 10 minutes. Or just slow cook in your pressure cooker!

The main kicker of flavor comes from the chipotles in adobo. I get quite a few questions about this ingredient, since I use it so much. It’s a smoked jalapeño which is found in the ethnic aisle of the grocery store. While they are a bit spicy, it doesn’t hold nearly as much heat as a jalapeño. Usually in recipes, I just list the sauce surrounding the peppers found in the can–not the actual pepper. Once you’re done cooking, you can freeze the leftovers for later use.

Slow-Cooker Turkey Taco Soup with Quinoa
Ingredients
  • 1.25 lbs ground turkey
  • 1 poblano pepper chopped
  • 1 bell pepper chopped
  • 2 cups Randall Beans Kidney Beans
  • 1 cup onion chopped
  • 1 cup frozen corn
  • 1 cup salsa
  • ¾ cup quinoa rinsed
  • 2 tablespoon chipotle in adobo sauce*
  • 1 tablespoon Cumin
  • 1 packet low-sodium taco seasoning 2 Tablespoons
  • 28 oz can of crushed tomatoes
  • 4 cups chicken stock
Instructions
  1. Brown ground turkey with onions, poblano and bell pepper until fully cooked.
  2. Turn your slow cooker to LOW setting for 6-8 hours. Spray with cooking spray.
  3. Add cooked turkey mixture and all ingredients, except topping suggestions.
  4. Allow to cook on LOW for 6-8 hours or HIGH for 3-4.
  5. Top with favorite taco garnishes.
Recipe Notes

Note: for a pressure cooker, use SOUP setting for 15 minutes.
