Disclaimer: This post is a collaboration with Produce for Kids. For a few years now, I’ve joined forces with them to help promote their awesome campaigns. I love everything they do to help create a healthier next generation!
Every year, I know school is coming soon when the Power Your Lunchbox campaign comes out from Produce for Kids. I adore all of the delish and eat-the-rainbow friendly ideas they give me for lunches and meals.
This year, Power Your Lunchbox is sponsored by:
- Bee Sweet Citrus
- Crispy Green®
- Litehouse®
- GROW
- NatureFreshTM Farms
- Pero Family Farms®
- RealSweet®
- WHOLLY® GUACAMOLE
- Zespri®
Since my girls are all about the Pero Family Farms® mini sweet peppers, I knew I had to come up with some new ideas to incorporate them into their lunchboxes. They’re great sliced in half for dunking in hummus or ranch.
Every week, I make a large batch of sliced chicken to add to salads, stir fry and more. If I’m feeling super lazy, I’ll just get the frozen variety to cook up quickly. This fajita mixture is great for Southwest salads, too!
Looking for new #LunchboxIdeas? Try this Cheesy Chicken Fajita rollup with a side of ranch. The kiddos will love this fun twist on a sandwich! If you are trying to avoid carbs, serve mixture in a lettuce wrap!Cheesy Chicken Fajita Wraps

Have you tried the new WHOLLY® GUACAMOLE cups? They have mini chips ready for snacking! I love to pair these with the Cheesy Chicken Fajita Wrap in the lunchboxes.
Zespri® SunGold kiwi are another fun treat to pack for a snack. They’re yellow kiwi that are packed with vitamins, antioxidants and fiber. You can slice in half to scoop with a spoon, or slice in little wedges.
