Is there anything better than an oooey gooey cheese dip? This Sausage & Beer Cheese Dip is perfect for New Years Eve or your next party.
Going to college in Wisconsin, cheese was a newfound staple in my diet. Obviously, I ate cheese before college, but that state really took my fondness of cheese to a whole new level. My favorite snack after a long night of…studying…was summer sausage and cheese.
At BlogHer Food this year, when I saw the Klement’s Sausage booth I made a beeline. I used to love buying their summer sausage at Woodman’s and I didn’t even know they offered other varieties. Their fully cooked Smoked Bratwurst, Polish and Italian sausage are new staples for our freezer. During busy weeknights, we can quickly serve up a pasta or potato dinner in less than 20 minutes using their sausage. Not to mention, they are SO full of flavor.
I know a lot of people are looking for new ideas for New Years Eve in appetizers and this is so perfect. In my opinion, staying warm at home is the way to go! In college, NYE was one of those over-hyped, overpriced nights where we would walk all over downtown Madison, freezing and trying to find the fun. Since we’ve been in Michigan, NYE are nights in with the kiddos. Much more fun–plus I’m not feeling like death January 1!
If you don’t have an oven safe pan, feel free to put this in the slow cooker!
Step One: Crumble the Polish Sausage in a chopper. Klement’s Chorizo would be delish too! Brown over medium-high heat. Add cream cheese, colby-jack cheese, ranch packet and half of the green onions. Heat until melted.
Step Two: Once everything is melted, slowly pour in your favorite beer. Top with additional cheese and bake!
Step Three: Bake at 375 for 10 minutes, or until melted.
- 14 oz Klement's Cooked Polish Sausage
- 8 oz Colby-Jack cheese , shredded
- 5 green onions , thinly sliced
- 1 packet ranch seasoning
- 3/4 cup favorite beer (Miller Lite is great!)
- 2 packages (8 oz) light cream cheese
- Dipper options: pretzels , corn chip scoops, bread, pita chips

Preheat oven to 375º.

In a chopper, add sausage. Pulse to chop into smaller pieces.

Heat an oven-safe pan (or cast iron skillet) over medium-high heat. Add sausage and brown.

Add cream cheese, ranch packet, 1/2 chopped green onions and 1 cup of shredded cheese. Stir frequently with a spatula to melt.

Slowly pour beer into pan. Allow to mix into cheese. Top with remaining cheese and green onions.

Bake for 10-12 minutes, until golden brown.
The pretzels were a great dipper, but the possibilities are endless! You could serve this in a bread bowl with pieces to dip, or soft pretzels, corn chip scoops and even pita chips. As the dip cools, it’s still great to serve–which is a total plus for a party!
