When I discovered one dish cooking a little over a year ago, I instantly fell in love. Who doesn’t want less dishes after a long day?! If there’s a pasta or rice dish on my meal plan, I will do everything in my power to make it one pot. This is so helpful, especially during this busy back to school season that is upon us!

This dish stemmed from my craving for piccata. I love the combination of lemon and rice, but I didn’t have capers on hand…so this dish is a creation from what was available in my pantry. Don’t you love when those mad scientist style meals end up being delish?! This is an instant hit in my house.

Lately, Maddie has been super picky about chicken, so I’ve been using pork and beef more. Pork tenderloin goes on sale at Kroger frequently and it cooks up quickly–it’s always on hand in our house! With school starting back up and a new baby, my meal planning motto is “keep it simple.” I want my family to be nourished, but I absolutely don’t have time to cook right now. This is a fancy fake-out meal that everyone loves. Serve, with a veggie on the side, in 30 minutes!

The Smithfield Marinated Roasted Garlic & Herb Fresh Pork Tenderloin is our favorite variety. You can go so many different roads with the flavor profile: Italian, Mediterranean or even grilled with BBQ accents!

Step One: Thinly slice the pork tenderloin in 1/2 inch coins. The pork is so tender, it’s almost like butter when you slice it.

Step Two: Fill a pie plate with flour and season with garlic powder, plus salt and pepper. Lightly dust the tenderloin pieces in the flour and shake off any extra.

Step Three: Heat a large pan over medium high heat. Add 1 Tablespoon extra virgin olive oil. Brown the floured tenderloin pieces quickly, about 2 minutes on each side. The pork does NOT need to be cooked through.

Step Four: Remove tenderloin from pan. Set aside for later.

Step Five: In the same large skillet, add garlic and onion. Sauté for 2 minutes, then add rice to toast.

Step Six: Slowly pour in chicken stock, half + half and lemon juice. Stir and bring to a bubble. Return pork tenderloin to pan and top with parsley flakes and lemon slices. Cover. Cook on medium-low heat for 15 minutes. Serve immediately.

One-Pan Lemon Herb Pork with Rice

Quick and easy dinner using Smithfield Marinated Fresh Pork Tenderloin from Kroger--perfect for back to school!

Ingredients
  • 1 package Smithfield Marinated Roasted Garlic & Herb Fresh Pork Tenderloin
  • 3/4 cup flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon each: salt and pepper
  • 1 Tablespoon Extra virgin olive oil
  • 1/2 cup onion chopped
  • 2 cloves garlic minced
  • 1 lemon half sliced, half juiced
  • 1 cup white rice
  • 2 cups chicken stock
  • 1/2 cup half + half
  • 1 teaspoon parsley
Instructions
  1. Slice the pork tenderloin in 1/2 inch coins.

  2. In a pie pan, add flour, garlic powder, salt and pepper. Coat each side of the pork tenderloin with flour. Shake off excess.

  3. Heat a large skillet over medium-high heat. Add EVOO. Brown pork on each side for about 1-1.5 minutes. It does NOT have to be cooked through at this point. Remove from pan.

  4. Add onions and garlic to pan. Sauté for 1 minute. Add rice and toast for 2 minutes.

  5. Slowly pour chicken stock, juice from half of a lemon and half + half into pan. Stir. Allow to come to a bubble. Return pork to pan. Add lemon slices and sprinkle with parsley.

  6. Cover and cook over medium-low for 15-17 minutes, or until rice is tender. Serve immediately.
