This time of year, the end of the school year chaos gets the best of us. I’ve been so lost when it comes to weeknight dinners.

If you’ve never had a Cubano, it’s one of my go-to sandwiches when we go out to eat. Crispy, grilled bread is paired with pulled pork, ham, cheese, pickles and a mustard/mayo mix. To switch it up, I thought the Curly’s RoadTrip Eats West Coast IPA Style would be perfect! The BBQ and mustard sauce are a perfect match! We love sliders, so I flipped around Hawaiian rolls for the crusty bread.

Olivia took on the task of mixing mayo and mustard, Maddie ate the pickles and Gabby helped me heat up the Curly’s pulled pork. I have found when the girls help in the kitchen, they’re more excited to eat everything on their plate. We kept it simple with some potato chips and some carrot sticks.

Curly’s BBQ Cubano Sliders
Ingredients
  • 1 package Curly’s RoadTrip Eats IPA Pulled Pork
  • 1 pack of Hawaiian mini rolls (12 count)
  • Bread & Butter pickle slices
  • 2 Tablespoons mayo
  • 1 Tablespoon mustard
  • Havarti or swiss cheese slices (about 1 slice per 4 rolls)
  • Smoked deli ham
Instructions
  1. In a small bowl, mix mayo and mustard together. Set aside.
  2. Since the Hawaiian rolls are connected, simply slice the whole sheet in half, lengthwise, keeping them connected. Now break in half so you have 6 buns together. Invert so they're inside out.
  3. Heat a grill pan over medium heat. Spray with cooking spray.
  4. Place bottom of roll sheet on grill pan. Spread mustard/mayo mix on top of the rolls. Layer cheese slices, pickles, ham and finally Curly's pulled BBQ. Place top on.
  5. Press on grill pan. Flip as cheese starts to melt. Grill for about 4 minutes total.
  6. Repeat with the other half of buns.
  7. Cut into slider shape, following bun lines. Serve with an extra pickle on top.
  8. NOTE: you can grill individually too, I just did this way to save time!
