Light and fluffy pancakes with Nancy’s Whole Milk Yogurt and spiralized apples. YUM! Mix these up for your next weekend breakfast or weeknight brinner.

Okay, who is confused about dairy? Like, one day you’re being pushed info about skim, low fat or NO fat…then they’re like “whoops!” and decide whole milk is best. Same with eggs. You hear “no eggs, they’re BAD” and then you hear “no, they’re SO great for your diet”.

As a Mom, I’ve realized I need to do what’s best for the family. Do we eat all organic? No, but I try when I can. I stopped trying to be perfect ages ago. For dinner on long days, there’s mac and frozen nuggets…#noshame. I feel as long as I offer plenty of produce and dairy, I can mix in some brownies and frozen food. We’ll all be fine.

It’s actually frequently on sale for the same price, or even cheaper than non-organic! Have you tried Nancy’s? It’s SO delish and creamy…plus it has quite a bit less sugar than other varieties. Score! I’ll save the sugar for some cookies later in the week 🙂

Next time you’re making pancakes, try whole milk yogurt in them instead of buttermilk or regular milk. They’re SO GOOD. We make homemade pancakes about 2-3 times a month and this recipe is our go-to. If you’re not in the mood for apples, try blueberries. Or Bananas with chocolate chips. Everything stays the same, except the fruit!

No matter how safe I am, I always get a knuckle or two when I’m using a grater. You can make extras for oatmeal during the week, too. They will get a bit brown, but they still taste great! After spiralizing, just run your knife through the apples quickly so you don’t have SUPER long ribbons.

Light and fluffy pancakes using whole milk yogurt and spiralized apples. Feel free to sub in any other favorite fruit. YUM!
Ingredients
  • 2 cups flour
  • 2 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups Nancy's Vanilla Whole Milk yogurt
  • 2 eggs
  • 2 Tablespoons coconut oil , melted (or butter)
  • 1 lemon , juiced and zested
  • 1 teaspoon pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 apple , spiralized or grated (with skin)
Instructions
  1. In a medium bowl, combine flour, sugar, baking powder, baking soda and salt. Set aside.
  2. Preheat a griddle to 375º.
  3. In a large mixing bowl, add yogurt, eggs and coconut oil. Mix until combined and creamy. Add juice of one lemon, plus zest.
  4. Add vanilla and spices. Mix. Slowly add in dry ingredients, mixing only until combined.
  5. Fold in spiralized apples.
  6. Use a 1/3 cup to scoop onto griddle. Batter will be thick and lumpy...don't worry.
  7. Flip once bubbles form and remove from griddle when golden brown.
Recipe Notes

If you don't use coconut oil, sub butter. Sub extra cinnamon for pie spice, if unavailable.
