My Pantry Favorite: Red Gold Tomatoes!

The past month has been crazy, to say the least! We’ve been battling every flu possible and I’ve been busier than ever. During the month of January, I challenged myself to clean out my pantry. We had so much clutter and I truly didn’t need to go shopping for much, aside from fresh produce. As I started making different meals based on what we had, I found that there are simply some items that I cannot live without. Canned tomatoes are Number One on my list!!

Having quick and easy go-to meals from the pantry are essential when life gets crazy. I knew I could pull together some random meal in less than 30 minutes on any given day. No matter what type of meal it was: Italian, Mexican or a burger night, it seems as if I’m always using my Red Gold Tomatoes.

After I got past the point of feeling lightheaded, I had SO much fun! Everyone in the studio was warm and welcoming–I didn’t feel nervous at all.  My next live show will be on March 3–be sure to follow along on social media to see my insider details.

My first appearance, I made a Superbowl friendly DIY Queso bar, using the Red Gold tomatoes with diced green chiles and Velveeta Queso Blanco. It was a huge hit with our family! It was fun to be able to let everyone pick what they want in their queso: turkey chorizo, jalapenos, green onions, chili or even taco chicken!

Last Friday, my fancy fake-out for an at-home date night aired. It’s a super simple Spicy Rigatoni with Vodka sauce. This sauce is a MUST TRY.  Here’s the video:
