Pasta e Fagioli is a comfort food classic that is the perfect meal on a cool day. This recipe switches it up by adding hearty Randall Mixed Beans. YUM!

Pasta Fagioli using Randall Mixed Beans. SO hearty and delish! via @DashOfEvansYou’re probably thinking: again with the soup? Yes! Again! I love soups that can be a meal…and this one is a delish and super filling. Also…you can have 2 bowls without worry. It chock full of healthy veggies and fiber rich beans.

The Randall Mixed Beans are my favorite because they can switch up any favorite soup or chili recipe. I have also found it’s an easy way to introduce new beans that the kids might not like–if I say lima beans, they say “yuuuck”. But if they’re gobbling them up in their soup, I’ll point out that they’ve been enjoying them. In the Mixed variety, theres: Great Northern, Red, Pink, Light Kidney, Navy, Baby Lima and Peas.

If you aren’t a fan of ground turkey, simply swap for beef or even a nice pork Italian sausage. You do you 🙂
