Cheesy Spiralized Potato Casserole

Skip the box and make this easy homemade cheesy potato casserole using spiralized potatoes. YUM!

Servings: 8 people
  • 2 pounds russet potatoes, spiralized or sliced thinly To get slices while spiralizing, slice halfway through the potato.
  • 1/2 cup milk
  • 1/2 cup onion finely chopped
  • 1 can low sodium cream of chicken soup Try Aldi's FIt n' Active
  • 2 cups shredded colby-jack cheese, split
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground pepper
  1. Preheat the oven to 375ยบ. Coat a 9x9 casserole dish with cooking spray.

  2. Spiralize the potatoes into slices, rinsing and drying after. (Slice 1/4" thick if you don't have a spiralizer). Feel free to peel the skin if desired.

  3. In a small bowl, mix spices, cream of chicken soup and 1 cup of cheese. Slowly pour in milk. Stir.

  4. Put potatoes in the casserole dish. Top with soup mixture. Stir to coat. Sprinkle with remaining cup of cheese. Top with foil. Bake 30 minutes. Uncover for 10-15 minutes, or until brown. Sprinkle with parsley, if desired.

  5. Season with additional salt and pepper, if desired. Serve immediately.
