Pulled Pork Taco Salad with Avocado Ranch Slaw

Easy meal in 15 minutes? Yes please! Curly's pulled pork is combined with an avocado ranch slaw for a new twist on taco salad.

Servings: 2 Large Salads
  • 1 package Curly's Pulled Pork
  • 2 premade taco salad shells
  • 2 cups coleslaw mix
  • 1 cup curly kale, chopped
  • 1/4 cup Avocado Ranch dressing
  • 1 whole avocado, mashed
  • 1/2 lime, juiced
  • 1 roma tomato, seeded and chopped
  • 4 green onions, sliced
  • Sour Cream, optional
  • 1/4 cup cheddar cheese
  1. In a medium bowl, toss the coleslaw mix, kale and avocado with the avocado ranch dressing. Squeeze lime juice over the top. Set aside.

  2. Heat Curly's Pulled Pork as directed on package.

  3. To assemble, put slaw mix in the bottom of the taco salad shell. Top with pulled pork, green onions, cheese and tomato. Add sour cream, if desired.
