Quick and easy dinner using Smithfield Marinated Fresh Pork Tenderloin from Kroger--perfect for back to school!
Slice the pork tenderloin in 1/2 inch coins.
In a pie pan, add flour, garlic powder, salt and pepper. Coat each side of the pork tenderloin with flour. Shake off excess.
Heat a large skillet over medium-high heat. Add EVOO. Brown pork on each side for about 1-1.5 minutes. It does NOT have to be cooked through at this point. Remove from pan.
Add onions and garlic to pan. Sauté for 1 minute. Add rice and toast for 2 minutes.
Slowly pour chicken stock, juice from half of a lemon and half + half into pan. Stir. Allow to come to a bubble. Return pork to pan. Add lemon slices and sprinkle with parsley.
Cover and cook over medium-low for 15-17 minutes, or until rice is tender. Serve immediately.
