Looking for a great new dip? This one is creamy, cheesy and oh-so-delish. Always a favorite for game days or gatherings!
I used to do grocery store demos and this was always a huge favorite for guests to try. In my opinion, you can throw cream cheese with any dip and it turns out fab. The star of this recipe is the Captain Rodney’s Sweet & Spicy glaze, which is a sweet sauce with a bit of chili kick. I like to use the glaze on grilled chicken or shrimp, also! If this isn’t available in the condiment aisle of your grocery store, feel free to sub sweet chili jelly. I’ve also found this glaze hiding in the jelly aisle at the store.
Step One: Mix cream cheese, mayo, cheddar cheese and green onions in the bottom of a pie dish or 8×8 square pan. Smooth the top.
Step Two: Top with crushed Ritz crackers. Bake for 15 minutes.
Step Three: remove from oven and top with Captain Rodney dip and bacon. Bake for an additional 5 minutes.
Step Four: To serve, spread on crackers.
- 1/2 cup mayo
- 8 oz brick of cream cheese , softened to room temp
- 2 cups grated colby jack cheese
- 2 green onions , thinly sliced
- 6 Ritz crackers , crushed
- 8 slices bacon , cooked then crumbled
- 1/2 cup of Captain Rodney’s Sweet Heat Glaze

Preheat oven to 350º

In a pie pan or 8x8 square dish, mix mayo, cream cheese, cheddar cheese and green onions.

Top with Ritz crackers and bake at 350 degrees for 15 minutes.

Top with bacon and Captain Rodney’s Pepper Glaze. Bake for an additional 5 minutes.

Serve with crackers to dip. Also great with carrot or celery sticks!
Every New Year’s Eve, we serve this dip as part of our big appetizer spread for the evening. This is also great for Superbowl or tailgating!
