Lately, I’ve been really trying to focus on prepping our meals each Sunday. I browse the pantry to figure out our dinner for each night and then I prep items to make everything simple during the week. If you’re looking for any new ideas, be sure to check out my new Facebook group!
When I first started doing this, I realized I needed to focus on my lunches, as well. With a baby at home, meal times can be small windows of time. I wanted to ensure that I could eat something delicious quickly, yet have it be healthy too!
In our pantry, we always have StarKist’s tuna pouches on hand. On the go, I’ll grab a pouch and a hard boiled egg for an easy protein boost (and SO Weight Watchers friendly!). If I have more time, I like to add the flavored tuna to salads or wraps. The pouches come ready to eat, so they can be enjoyed at anytime!

This tuna cake recipe is my new obsession for lunch. Think crab cake consistency with tuna. SO quick and easy to make a small or large batch, too.

Flavorful (and healthy!) tuna cakes made with StarKist Tuna Creations® BOLD Tapatio pouches. YUM!
- 3 pouches StarKist Tuna Creations® BOLD Tapatio
- 1/2 cup Plain Breadcrumbs
- 1 egg whisked
- 2 tablespoons Light Mayo
- 1/4 teaspoon cumin
- 1/4 teaspoon onion and garlic powder
- 1/4 teaspoon paprika

In a medium sized bowl, add tuna and breadcrumbs. Stir to combine, adding more breadcrumbs if needed. Slowly pour in whisked egg.

Mix in light mayo. Season with spices and stir.

Heat a pan over medium heat. Coat with cooking spray. (If desired: add 1 teaspoon canola oil).

Using a 1/4 measuring cup, form patties and add to pan. Cook for 2-3 minutes on each side, or until brown.

Serve or store for later!
