It’s the most wonderful time of the year! From cookies to eggnog and indulgent food all around us, it’s nice to have a few healthier options on the menu. This salad is super simple and you can easily prep most items ahead of time. When you’re asked to bring a dish to pass, try this salad!

I was so excited when Earthbound Farm came out with their chopped salads. We adore their organic salad mixes and it’s so convenient to have toppings and dressing in one container. I can easily eat the Southwest Chopped salad on it’s own, but to feed the whole family I bulk it up a bit with extra ingredients.

You can buy blackening spice at the store, or make it quickly with spices in your cabinet. It’s much better and you can alter the spice level to your taste. I like to put it on chicken, shrimp, steak, fajita veggies and more.

Depending on if you want cold or warm chicken on your salad, you can make this up to 5 days before serving the meal.

Southwest Chopped Salad w/ Blackened Chicken
Delicious Earthbound Farm Southwest Chopped salad is bulked up with blackened chicken, corn and creamy avocado. YUM!
Servings: 4 large salads
Ingredients
Blackening Spice Mix
  • 1.5 Tablespoons paprika
  • 1 Tablespoon onion powder
  • 1 Tablespoon dried thyme
  • 1 Tablespoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper or to taste
  • 1/2 teaspoon kosher salt
Salad
  • 1 bag Earthbound Farm Southwest Salad
  • 1 pound boneless, skinless chicken breast
  • 1 cup frozen or fresh corn
  • 1 can black beans, drained and rinsed
  • 2 whole Roma tomatoes, chopped
  • 2 whole avocados, sliced
Instructions
  1. Combine blackening spice ingredients in a small jar. Sprinkle about 4 tablespoons onto the chicken. Rub on spices and drizzle with canola oil.

  2. Grill chicken over medium high heat until fully cooked. Set aside to let cool. Chop into bite sized pieces once cooled.

  3. In the same pan, add corn and season with about 1 teaspoon blackening spice. Cook for 2-3 minutes, then set aside.

  4. To assemble the salad, toss the bagged ingredients together, setting the crispy strips to the side. Top with chopped chicken, corn, tomatoes and avocado slices. Finish with crispy strips.

  5. For a party: keep chicken, tomatoes, avocado and dressing on the side. Toss before serving in a large bowl. You can easily double or triple the salad size with extra bags of salad mix.

I found this salad stays crisp with dressing on it for quite longer than normal salads: almost 2 days! If you’re looking to serve this at a gathering, save the chopped chicken, tomatoes, avocado and dressing on the side. Just toss right before serving. Other great items to add: chopped cucumbers, red peppers or jalapenos.
