Looking to add a boost of nutrition to your morning? Try this delicious breakfast quesadilla with egg, peppers, black beans, sweet potato and cheese, toasted in a crispy wheat tortilla. YUM!

Every weekend, I try to do a little prep work to make weekday meals go a bit smoother. I chop veggies, grill chicken and usually make a soup or two. My focus has always been on lunch or dinner, but I realized breakfast is just as important. Last week I scrambled up eggs and grilled up bacon to make simple breakfast options!
Since my kids are on a quesadilla kick lately and I thought I should add a breakfast one to our list! These are filled with easy to prep ahead ingredients and you can switch up the fillers with so many options. We started with a simple bacon, cheese and egg quesadilla and the next morning my kids were begging for more. Since I had a sweet potato roasted, this Southwest style one popped into my head for round 2. Aside from breakfast, these would be fabulous for a Meatless Monday brinner. Simply serve with a fruit salad and some yogurt for a filling meal!
Don’t be afraid of scrambled ahead of time eggs. They reheat to be fluffy and delish, just like the first time around. The key is to add some cheese while cooking originally and a splash of milk before popping into the microwave to reheat.

Start your day off great with a nutrition packed breakfast quesadilla. Filled with black beans, roasted sweet potato, eggs, cheese and a toasty whole wheat tortilla. YUM!
- 2 whole whole wheat tortillas, fajita size
- 1 cup scrambled eggs
- 1 cup Earthbound Farms organic baby kale chopped
- 1/2 cup Sunset cherry tomatoes halved
- 1 whole sweet potato cooked and cubed
- 1/4 cup black beans drained, rinsed
- 1/2 avocado cubed
- 1 cup colby-jack cheese* shredded
- 1/4 cup chopped bell pepper
- 1/4 cup prepared salsa

Heat a large skillet over medium heat. Coat with cooking spray.

Lay one tortilla flat and cover with 1/2 cup cheese. Top with all ingredients, except avocado, on one half of the tortilla.

Allow cheese to start melting, then fold the tortilla in half. Cook for 1 minute, then flip to other side.

Remove from pan once golden brown and repeat with other tortilla.

Serve with salsa and avocado cubes. Pairs great with yogurt and fruit, too!
*Use whatever cheese you prefer. Pepper jack is great too!

Oh my gosh, yes it was! So sorry. Added. I just cook a sweet potato in the microwave and cube it beforehand.
