I love to scan Pinterest for amazing dessert recipes, mostly ones I’ll never even make. I’ve tried pins that declare they’re the BEST COOKIES EVER, but you know what? I always go back to my Nestlé Toll House chocolate chip cookie recipe. To me, those are the best cookies ever. Also, they remind me of special baking time with my dad growing up. Chocolate chip cookies are his specialty.

Although the Butterfinger varieties sounded tempting, I knew I had to make S’mores Brownies. I am determined to find a way to enjoy S’mores ALL year long. Why should they be a summertime dessert only? Don’t worry, I picked up every variety available–be prepared for some tasty desserts ahead!

Maddie was my shopping helper at Meijer and she spotted the mixes right away. Just look on the top shelf! We love to take a little help from the store with baking mixes, especially when I’m getting some help from the kiddos. Plus, how many times have you started a recipe to realize you’re out of one ingredient? It’s always the brown sugar here. With baking mixes, everything is all measured for you!

Step One: Make graham cracker crumbs. In a chopper (or blender) add 4 sheets of graham crackers, 1 Tablespoon of sugar and 2 Tablespoons softened butter. Pulse until mixture turns into crumbles.

Step Two: Spray muffin liners with cooking spray. Add 1 Tablespoon of graham mixture into each cup (Makes 12). Press down with a smaller spoon. Set aside.

Step Three: Make Toll House brownie mix according to package, adding ALL of the chips, not just 2/3rds. Look at those beautiful chips!

Step Four: Layer brownie mix on top of graham cracker crust. Bake at 325º for 10 minutes.

Step 5: After baking for 10 minutes, add one large marshmallow to the top of the brownie cups and raise heat to 425º. Bake for 5-7 minutes, until marshmallow has toasted.

I think they’re a hit! The girls were out swimming while I was baking and this was a perfect outside treat before lunch.

S’mores Tollhouse Brownie Cups

Servings: 12 brownie cups
Ingredients
  • 1 box NESTLÉ® TOLL HOUSE® Brownies & More with chocolate morsels
  • 4 sheets plain graham crackers
  • 1 Tablespoon Sugar
  • 2 Tablespoons butter , softened
  • 12 large marshmallows
Instructions
  1. Preheat oven to 325º. Line a muffin tin with 12 liners. Spray with cooking spray.
  2. In a chopper or blender, add graham crackers. Pulse to crush. Add sugar and softened butter. Pulse again to make crumbs.
  3. Add 1 Tablespoon cracker crumbs to each muffin liner. Press with the back of a small spoon. Set aside.
  4. Make Nestlé Toll House brownie mix as directed, adding all of the chocolate chips into the mix.
  5. Layer brownie mix on top of graham cracker crust.
  6. Bake for 10 minutes. Remove from oven. Raise heat to 425º.
  7. Top each cup with 1 marshmallow. Return to oven for 5-7 minutes, or until marshmallow is toasty.
  8. Enjoy!

      Totally! You can use a smoothie blender, rolling pin or a hammer 🙂 Or your hands–perfect on a stressful day!
