Every time we hit the road, I have a container of this Sriracha Chex Mix in the car. It’s savory and crunchy–perfect for a road trip snack!
Ahhh, summer road trips. Growing up they were always a time for me to catch up on my Baby-Sitters Club books and blast mix-tapes on my Walkman in the back of my parent’s car. Now, with kids, it’s quite different. I’ve traded my Janet Jackson mix-tapes in for Radio Disney.
Last year, we took a trip to Mackinac Island with my parents, which was a short 4 hours away. The year before we were brave and took a 17 hour trip to Hilton Head, SC. Now THAT was a bit of a feat with 5 year old twins and a 2 year old. We drove through the night, which helped a ton! This August, we are heading to Niagara Falls and then back through Ohio–cannot WAIT to have a little vacay!
I am fortunate that my kids are pretty decent travelers. Once we get past the initial bickering, they’re pretty content coloring, reading or sleeping (thank you Benadryl!). We have some staples for the car: clipboards with new coloring books, wet wipes, frozen GoGurt and this SO addicting Sriracha Chex Mix.
This recipe takes regular Chex Mix up a notch with coconut oil for a touch of sweetness (butter is a-okay too!) and spicy sriracha. Even my kids gobble this mix up! I tend to make this quite often on SnapChat and people always ask for the recipe. I figured I should probably have it on my site! If you don’t own a microwave, you can easily toast this in the oven at 250º for 1 hour.
- 1/2 cup coconut oil , melted
- 1/3 cup Sriracha
- 2 tablespoons Worcestershire sauce
- 1 tablespoon seasoned salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3 cups EACH: Corn , Rice and Wheat squares cereal
- 2 cups pretzel sticks
- 1 cup honey roasted peanuts
- 1 cup sesame sticks

In a small pourable container or bowl, add coconut oil, sriracha, Worcestershire sauce and spices. Set aside.

In a large, microwave safe bowl, combine Chex, pretzels, peanuts and sesame sticks. Stir to combine.

Slowly pour coconut oil mix into larger bowl. Stir to coat cereal mixture.

Microwave on HIGH for 6 minutes, stirring every 2 minutes.

Allow to cool on a paper towel covered cookie sheet. Store in an air-tight container.

Even if you’re not hitting the road, this is a great snack to have on hand. I bring this to parties and even give it as a gift right in the mason jar! This pairs well with beer for a poker night or an outdoor concert. The possibilities are endless!

I’ve started cooking a bit with sriracha for some Asian recipes – it’s quite good.
And Hilton Head is beautiful! I’ve only been once, for a few hours, when visiting Savannah. One day I will go back. 🙂
