Believe it or not, there are HUNDREDS of recipe ideas from watching the show. Aside from the constant stream of junk food (BTW, how are they so skinny eating like that?!), there are quite a few gems. Last week, Melissa made Magic Risotto–I cannot WAIT to try it.
I met Melissa last year at BlogHer Food and we had an instant bond. She lives in Wisconsin and we’re the same age–we’ve stayed connected throughout the past year. Once I knew she also liked GG, this idea was formed. Did you notice my awesome new design?! That’s all Melissa too!
First up, I’m tackling Slow-Cooker Peppermint Cocoa–perfect for creating the perfect Candy Cane Coffee. In the episode (Season 7), Rory celebrates Christmas with Logan in London, so Lorelai and Rory have to do their own holiday in January when she gets back. Lorelai’s favorite Candy Cane Coffee is no longer being served and she is SO mad.
I know you are all excited about Pumpkin Spice on allllll of the things, but I’m ready for my peppermint and the holidays. I know…I KNOW. I’m nuts. I’m always a bit off with my cravings. Mid-summer, I always make a huge turkey dinner. When I was pregnant with the twins, I wanted Caramel Apple Suckers in December. You never know when cravings are going to hit!This Slow-Cooker Peppermint Cocoa is delicious and your house smells ah-mazing while it’s cooking. When I make a batch, I use it almost like a creamer for my coffee. Enter: Candy Cane Coffee. The secret ingredient to my cocoa is marshmallow fluff–very GG of me.

- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/2 cup water
- 4 cups almond milk (or your favorite variety)
- 1/4 teaspoon peppermint extract
- dash of salt
- 1 cup marshmallow fluff
- Favorite prepared coffee

Heat your slow-cooker to LOW heat.

Add all ingredients, except coffee and marshmallow fluff. Whisk to combine, making sure there aren't any large chunks of cocoa powder.

Cook for 2-3 hours on LOW. Add marshmallow fluff and stir. Allow to cook for 20 more minutes.

In a mug, fill 1/2 up with coffee. Ladle peppermint cocoa over.

Stir with a candy cane and top with extra fluff.
Peppermint extract is super strong, so be careful! You can add up to 1/2 teaspoon, but that's all I would recommend.
Heads up: peppermint extract is VERY potent. A little goes a LONG way. If you’re not a fan, feel free to sub in vanilla or hazelnut extract. And don’t go easy on the marshmallow fluff. An extra dollop or few is totally Gilmore Girls style.
