Have you ever been too intimidated to make paella at home? Using a cast iron skillet and easy to find ingredients, it can be an easy weeknight dinner, too!
When I see paella on a restaurant menu, I always gravitate towards it. I love when it’s full of seafood and delicious smoky chorizo. For some reason, I never thought to make it easily at home with a cast iron skillet! If you don’t have any shrimp on hand, you can easily make this with just chicken and sausage.
Saffron can be pricey, so you can easily leave it out. I found a small portion in the ethnic aisle of our local grocery store for under $5. For as much as I use it (like, never), it was perfect! The rice gets a beautiful yellow hue from turmeric.
To make this for a delicious (and easy!) dinner party meal, try serving up some sangria with it and starting with a nice cheese tray or tapas.
