Looking for a new mason jar salad for lunch? This Greek Salad with chickpeas is perfect! Add chicken for even more protein!

I’m always looking for easy salads to add to the mix. Literally, because I’m all about store-bought, prewashed mix. I have a salad spinner and it just drives me bonkers…the convenience of the Earthbound Farms Organic salad mixes trumps everything. Plus, it’s ALWAYS on sale and has an mPerk.
Our go-to mix is the Power Greens with baby spinach, baby chard and baby kale. It’s packed with nutrients and great for salads and smoothies. I like that the baby greens have a lighter flavor, which goes well with most salads.
Going with the easy theme, this salad is done in less than 5 minutes. A little longer if you’re adding grilled chicken. The Marzetti® dressing is perfection on it’s own, yet I love a little topper of tzatziki sauce for my Greek salad. If you want to be super extra, try some toasted Naan.
To make this a mason jar salad, simply layer chickpeas and dressing at the bottom, top with veggies and end with greens. I keep the tzatziki on the side. Main tip for layering: keep the protein at the bottom in the dressing. They’re less likely to get soggy and they’ll be nice an marinaded by the time you enjoy the salad! If you’re new to making mason jar salads, you might want to bring some extra dressing on the side if you’re not sure portion sizes yet.

- 1 package Earthbound Farm® Power Greens mix
- 1 bottle Marzetti® Mediterranean Greek dressing
- 1 cup cucumber, chopped seeded, peeled
- 1/2 cup canned chickpeas rinsed, drained
- 1/2 cup SUNSET® cherry tomatoes sliced in half
- 1/2 cup chopped red onion
- 1/4 whole red bell pepper chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced Kalamata olives
- 2 tbsp favorite tzatziki dressing

Create an assembly line with the chopped veggies. Place the salad greens in a bowl. Toss with dressing.

Top with remaining veggies and sprinkle with feta cheese. If desired, add a dollop of tzatziki sauce.

If you want to serve later, simply leave the dressing and tzatziki on the side.
