When I was in college, my favorite “fancy” treat-myself meal was Cordon Bleu. Nope, not homemade. I would grab a single one from the frozen food section at Woodman’s for a dollar and it felt super special. For nostalgia, I will pick these up once and a while from the grocery store. There’s just something comforting about those little packages!
For some reason, I rarely make it at home from scratch. Believe it or not, it’s quite easy and always a huge hit with the whole family. I realized it’s time to get this easy weeknight meal on the blog! My kids have already requested it to be added to the meal plan again.
The main components of a Cordon Bleu are cheese, ham, chicken and some sort of breading. You can play around with different varieties of each component to make it fun. This recipe uses a ranch sauce, instead of a dijon mustard style. Instead of typical bread crumbs, I am using our favorite Garden Veggie crackers to crumble.
I absolutely adore the Prime Fresh Deli Honey Ham for our lunches. It comes from the refrigerated meat section of the grocery store, not the deli, but it seems like it was sliced fresh. We also love the turkey and roast beef varieties. Be sure to look for any of the six varieties in your local store!
Before you start making this, you’re going to want a few things handy: a meat mallet (or some way of pounding the chicken thin), toothpicks and parchment paper or a silicone mat. I also found a silicone brush super handy to brush the ranch sauce onto the rolled chicken, rather than a fork.
Be sure to season both sides of the chicken before rolling. As you can see above, it’s not a super tight roll, just enough to keep the cheese and ham inside before breading.
The cracker crumbs have plenty of seasoning to them, which is super helpful. If you’re using regular bread crumbs, be sure to get seasoned ones! I also love a dash of paprika on top of these for color.
Even though there isn’t breading on all sides, this baked Cordon Bleu is super comforting. The combination of melted cheese, crunch from the crackers and ham makes this so craveable!

During busy week days, you can prep the chicken rolls ahead of time and brush with the ranch mixture and cracker crumbs before baking. There are so many different sides you can serve with Cordon Bleu, we love rice pilaf, roasted or mashed potatoes, or just a simple side salad.
