Refreshing and simple, this frozen mojito is about to be your new warm-weather favorite!
I kind of have a love/hate relationship with mojitos. They are SO delicious and refreshing, but biting down on a huge chunk of mint is the worst. Or when the mint gets caught in the straw. #firstworldproblems
When we were on vacation in Myrtle Beach, Ricky and I were craving mojitos, but we didn’t have a muddler so I created some makeshift ones with a fork. From those, this frozen variety was born–I don’t know why I didn’t think of this before!
The best part about these drinks is you can improvise whatever flavors of rum you’d like. I mean, there are at least a dozen options out there now! I fell in love with Parrot Bay Passion Fruit rum mixed with soda water and a splash of lemonade on the beach.
Make one, two or a whole pitcher! It’s basically SUMMER!

No muddling needed here--this frozen mojito is the BEST reason to bust out your blender this summer. Fresh mint, Parrot Bay Passion Fruit rum and lemonade are paired together for this drool worthy adult slushy.
- 1/4 cup Parrot Bay Passion Fruit Rum or any flavored rum!
- 2 cups ice
- 10 whole fresh mint leaves
- 2 limes juiced
- 1 packet Crystal Light lemonade or 1/2 cup lemonade
- Diet 7UP or favorite lemon/lime pop

In a blender, add ice, rum, mint, lime juice and lemonade packet. Pulse and then blend until becomes slushie consistency. You may need more ice. DON'T WORRY IF IT'S SUPER THICK!

Scoop into a rocks glass, 3/4 way up. Slowly pour lemon lime pop over the top. Serve with a straw. HAPPY SIPPING!
I use the Crystal Light PURE lemonade packets–it’s sugar free and adds a great flavor. Feel free to swap out any lemonade you’d like.
