Looking for a new healthy breakfast option? Start your day off with these healthy Kale & Bacon Stuffed Peppers! Serve with toast, fruit or yogurt!
I am very fortunate to have three kids that love their produce. I have to portion everything out, otherwise we will fly through a whole container of berries or 2 pounds of grapes! Not quite sure where my girls put all of the food they eat–we are definitely going through some growth spurts!
has been one of our favorite resources for cooking with the kids. Their website offers lunchbox tips, recipes and information for parents and kids. Every time we are at Meijer, my kids scan the produce section for new recipe cards. They love to find new ideas for the kitchen!
This month, is raising money for Jump with Jill, a nutrition show that promotes healthy eating with song and dance. What kids don’t like to learn about something through music?! The Jump with Jill crew tours the country, performing at schools and events. To date, Produce for Kids has donated over $340,000 to Jump with Jill!
Look for signs at your local ! Gabby spotted the recipe cards right away and filled up our cart with items to make these breakfast peppers. Instead of the green peppers the recipe called for, she wanted a RAINBOW of peppers–she is quite obsessed with rainbows right now.
I have found adding veggies to certain items like these stuffed peppers is a great way to introduce something new. My kids might not jump right on board with raw kale, but sauteed with bacon? They’re all in! Plus, is there any better smell than onions and bacon cooking? I think not!
Feel free to substitute any of your other favorite veggies inside. Swap out the tomatoes for mushrooms or the regular onion for green onions. These aren’t just for breakfast, either! We try to do one breakfast for dinner (Brinner) a week and these are a great way to switch it up. I can imagine making these with pizza toppings too: ham and kale are a great combo!
- 3 bell peppers , whichever color you choose
- 1 teaspoon EVOO
- 1/2 cup onion , chopped
- 1/2 cup !SUNSET®! Campari® Tomatoes , chopped
- 3 slices cooked bacon , chopped
- 2 handfuls !Earthbound Farm®! organic baby kale
- 4 large eggs
- 2 Tablespoons milk
- 1/2 cup shredded colby-jack cheese
- Salsa to top , optional

My kids are picky, so you’re very lucky. My daughter is eating cherries for breakfast right now. I love sneaking in the veggies.

Wow! This seems like a great resource. While my son loves broccoli, it’s the only vegetable he’ll eat. I really want him to try (and enjoy) deferent ones.
