Easy Chopped Asian Lunchbox Salad

Crunchy, sweet and flavorful, this lunchbox salad is sure to be a hit and a great way to switch up your kiddo's meals!

Ingredients
  • 1 Boneless, Skinless Chicken Breast
  • 1/2 cup Teriyaki Sauce Or favorite teriyaki marinade
  • 1 package Coleslaw mix
  • 1/2 cup Snow Pea Pods chopped
  • 2 green onions chopped
  • 4 whole Pero Family FarmsĀ® mini sweet peppers seeded and chopped
  • 1/4 cup LitehouseĀ® Organic Ginger with honey dressing
  • 1 whole peach or mango chopped in bite sized chunks
  • 1/4 cup cilantro chopped finely
  • 1/4 cup wonton strips
Instructions
  1. Marinade chicken breast in teriyaki sauce overnight. Feel free to use your favorite store-bought marinade! Remove from sauce and grill, until fully cooked. Allow to cool. You can do this on a prep day, too!

  2. In a bowl, mix cole slaw mix, cilantro, pea pods, green onions and mini sweet peppers. Toss.

  3. To serve, pour dressing in a small container on the side. Add salad mix to lunchbox container (a mason jar is great, too...put the dressing on the bottom). Add chicken and peaches. Serve wonton strips on the side.

  4. Keep chilled with a frozen lunchbox cooler.

Recipe Notes

The chopped salad will keep without dressing for up to 3 days. I like to prepare on a prep day to enjoy all week!
