Crunchy granola tarts topped with banana pudding favorites: sliced bananas, vanilla pudding and homemade whipped topping. A simple, yet delicious dessert for any season!
When I was pregnant with the twins, I craved two things: caramel apple suckers and banana pudding. I got to the point where I would make 2-3 batches of banana pudding weekly. I figured, if I’m growing two humans, I can eat what I want! To this day, the girls LOVE banana pudding.
There are various ways to make banana pudding, but I love the added crunch of granola instead of vanilla wafers. It’s adds a whole new level to the dish. I fell in love with Quaker® granola squares when I was nursing the twins. I would pour a cup and crunch away–the added fiber was great! I am so happy I’ve found Quaker® Simply Granola–it’s absolutely delicious! It has large clusters of granola, crunchy almonds and the subtle sweetness of honey. I can eat it without milk!
As I was crunching away, I realized this granola would be PERFECT for baking, too! You know how graham crust is perfect for pudding? Why not make a crust with granola! It’s super simple and gives any dessert a satisfying crunch!
For the holidays, we like to make traditional desserts, such as sugar or gingerbread, but also add family favorites like banana pudding and apple cake. It’s fun to combine our families’ traditions to blend them into our own. Ricky likes to make his grandma’s tamales too!
In a small chopper or blender, just combine butter and granola. Slowly pulse until a crumble forms. For this recipe, I pressed into a muffin tin, but a larger size like 9×9 pan would be fantastic too. Consider that size for a cheesecake topping!
Although my pudding isn’t homemade, my whipped cream is! Did you know it just takes 2 simple ingredients and a minute? It’s a total game changer! Be careful not to over-mix your whipped cream: it can easily go from fluffy to yucky in a minute flat! Don’t be scared though, you’ll know immediately when it’s ready.
Banana Pudding Granola Tart Cups
- 2 cups Quaker® Simply Granola Oats , Honey & Almonds
- 3 Tablespoons softened butter
- 1/2 teaspoon vanilla extract
- 3.4 oz Instant Vanilla Pudding , made as directed
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 banana , sliced
- Optional: caramel for topping
Preheat oven to 375.
In a small chopper or blender, add granola. Pulse to crumble. Add butter and 1/2 teaspoon vanilla extract. Slowly pulse until a crumble forms.
Spray 9 sections of a muffin tin with cooking spray. Pour 1.5 Tablespoons of granola mixture in each, pressing with fingers or spoon.
Bake 4-5 minutes until brown.
Meanwhile, make instant vanilla pudding. Set aside. Check on granola cups! Allow to cool after removing from oven.
In a medium bowl, add heaving whipping cream and vanilla extract. Whip with a hand blender or mixer until frothy. Fold in pudding mixture.
To assemble, gently remove granola cups from muffin tin. Place a few banana slices on the granola cup. Pour 1-2 spoonfuls of pudding mixture. Top with a drizzle of caramel.
These can be stored in the fridge, covered, for 1 day.
These granola cups have so many uses, I cannot wait to experiment with them! The girls wanted to try them with yogurt and fruit for a new twist on a parfait. You could also crumble the granola over ice cream! For the holidays, instead of banana pudding, try cranberry cheesecake! The granola crust is actually quite healthy.
